The nozzle is a hoze barb... The "shut-off" valve is called a ball valve.... You can try a Blowgun as the valve, though it may not seal correctly after you are blowing solvents through its rubber parts
PSI Max with Air ranges on the pipes ID (inner diameter)

Note, these are the rated burst pressure of Harvel SCH-40 Pipe...
Make sure you are using no less than SCH-40 (Schedule 40)
NSF-PW (Public Health & Safety [NSF] - Pressure Water [Pressure rated]) pipe.
These are the MAX PSI of the pipes... so you want to be at about half of that... I've never taken my 4" cannon over 150psi (and I'm crazy).
Oddly enough, I have to change my mind... The original design would be great, if you pressured it with Propane instead of compressed air... Though it would be safe with Compressed air, I don't really like the idea of a possible explosion strapped to my back... Please buy a 125 PSI Pop-off valve just in case...
Mcmaster.com should have all of the more exotic parts... though you should be able to find all the pipe in the plumbing section, and all of the Pneumatic hardware in the Air compressor section...
Go with a 3" or 2" tank though, as 4" fitting are just a rip off...
Here's a Pneumatic (air powered if you didn't know) paintball gun I made...
Here's a fancy combustion (burns a fuel\air mixture to push projectile with gases) paintball gun
How about I make a cannon and paint it up with OWS emblems
